Another of the great white wines of France, with vineyards dating back to the fifth century, Pouilly-Fume is the direct result of Benedictine monks wanting to create a sacramental wine less prone to staining. Dating back to the Middle Ages, the wine is made purely from the Sauvignon Blanc grape, which at maturity, is a grape coated with a grey bloom, the colour of smoke, or ‘fume’ in French. Like Sancerre, Pouilly-fume will also claim the rights to being the perfect partner to fish and shellfish…but you will have to make your own mind up.
